Origin & Geography
The vineyards are situated on the south exposition along the river Nistru in the vine-growing zone of the South of Moldova, on the tchernoziom soils and dark grey forest soils. The average vine age is 10…15 years. Biological methods are used for vine protection, with no use of mineral fertilizers and herbicides.
Winemaking & aging
Produced from grapes harvested at their complete technological maturity, the wine is processed with the complete elimination of grape bunches, based on short or medium maceration and fermentation of the skins, selection of must fractions, controlled alcoholic fermentation. The malo-lactic fermentation is essentially made. The wine is aged in butts (500…1000 l), made from local oak, for 8…12 months.The clarifying, stabilization (exclusively with eggs albumin) and bottling is made on the estate. The bottles are kept in the cellar for minimum 1 month before sales.
Wine’s personality
A dark ruby colour, dense and deep. A reach and complex bouquet, with notes of red and black ripe fruits, harmonized by fine mineral nuances and noble leather. A soft, round and spicy mouthfeel. The fruitiness of the palate is expressed with a good strength, texture and volume, leaving a reach impression with a good bottle aging potential.
Gastronomy
Best served at 16…18 ºC. Will go well with sauce meet; will be especially enjoyable with barbeque and game.
