One of the best Moldavian white wines is Fume Blanc Sauvignon Blanc, 2016 IGP Valul lui Traian. And at the moment, the only wine from the grape variety Sauvignon Blanc, aged in oak barrels. The first experience of Fautor Company with this technology turned out to be extremely successful, which inspired winemakers to continue their work in this direction. I hasten to please those who fell in love with Fume Blanc Sauvignon Blanc, 2015, the wine from the harvest of 2016 turned out even better.
Trying it, I immediately felt the difference. The first wine was more powerful, the second – more elegant and noble, although in Fume Blanc Sauvignon Blanc, 2015 “breed” and a high level of quality was felt from the first breath of the bouquet. Of course, I could not help but ask about the reasons for the difference between the production director Tatyana Kroitoru.
For the Sauvignon Blanc wine of the 2015 harvest, were used American oak barrels produced in France. But, experimenting, we decided that for this wine is more suitable French oak. Furthermore, we used for the first time oak barrels made specifically for white wines (Tonnellerie Sylvain). A part of the wine was filled in them, and the second – in the universal barrels of French oak from the same manufacturer. Maturation lasted six months, like Sauvignon Blanc, 2015.
But it is very important that the Sauvignon-Blanc grapes are grown not in one locality, but on three vineyards located near the villages Filipeny and Romanovka in the Leova district and in the around of the village Vishnyovka in the Cantemir district. Two plantations are planted with Italian clones and one with Moldovan seedlings. Therefore, all wines from one kind of grapes are obtained different – with different contents of alcohol, residual sugar, titrated acidity and different flavors.
And in the blend they create a wealth of bouquet and taste. Wines from different sites are processed separately and they also pass the exposure separately. A blend is made immediately before bottling. In Fume Blanc Sauvignon Blanc, 2016 the composition of the blend is a little bit different, which also affected the wine. In our opinion, it is more delicate and subtle. Of course, the oak leaves its noble grade, – says Tatyana Kroitoru.
Fume Blanc Sauvignon Blanc, 2016 has changed the design of the label. But the flower of Maracuja fruit (the passion fruit), the aroma of which prevails in the aromatic bouquet of wine, remained the same on the label.

Important to remember!
Before you start drinking this wine, do not forget that it is made from Sauvignon Blanc grape, which differs from other varieties in that, it has almost no aromatic substances that could be revealed in the primary aroma of wine. Therefore, Sauvignon Blanc wines need time to saturate with oxygen. Otherwise your impression of this fine wine will be incomplete. And, of course, you need to cool the wine well.
Very harmonious
Despite the aging, the color of Fume Blanc Sauvignon Blanc, 2016 is straw-yellow. In a rich bouquet, a lot of aromatic shades – passion fruit, orange, white flowers, ripe berries, vanilla and light smokiness.
This wine is very well structured, 14% alcohol and quite high acidity – 6.7 g / dm3. Due to this fact, it feels freshness in flavor and in the taste, in which the notes of orange and smokiness are well pronounced. It is very soft, buttery rolling in the mouth. In a long aftertaste it feels a pleasant acidity and vanilla.
With what to combine?
For Sauvignon Blanc wines are considered a traditional gastronomic pair the oysters. But this is for wines not aged in oak. For Fume Blanc, in my opinion, it is better to choose something else. Cheeses in this case seem too ordinary for this aristocrat. I would recommend it to combine with prawns, but not fried, in white sauce. There is another option – if the wine itself is very rich, then why spoil it with food?

Where is it sold?
For a long time, the wine companies have only exported their best wines to the West. A big luck for the wine connoisseurs was the opportunity to buy these wines in Moldova. Fume Blanc Sauvignon Blanc (both 2015 first of all they entered on the Moldovan market. They are also exported to Germany and France.
Due to with France there is an interesting episode. The importer of Fautor wines on the sophisticated French market before the New Year called the manufacturer and informed: “For you there are two news – good and bad. The good news is that at the wine stores Fume Blanc Sauvignon Blanc is very well perceived by consumers. Trying this wine, they buy boxes of wine. And the bad news- because of the lot of requests we were left without Fume Blanc for the New Year”.
And the importer from Germany sent a photo on which he showed what wines he had prepared for his guests about the celebration of his birthday. From the white wines there was … only Fume Blanc Sauvignon Blanc, 2016. While he works with producers from all wine-making countries of the world …
