Am folosit un raport de 60\/40 \u00eentre Viorica \u0219i Riton, pe care \u00eel consider\u0103m optim pentru a pune \u00een valoare at\u00e2t aromele, c\u00e2t \u0219i gustul vinurilor noastre\u201d, spune vinificatoarea principal\u0103 de la Mile\u0219tii Mici, Maria Bebea.<\/em><\/p>\n<\/blockquote>\n\n\n\n<p>Metoda Charmat permite producerea vinurilor \u00een tancuri mari \u00eentr-un timp scurt \u2013 aproximativ 30 de zile. C\u00e2nd vinificatorul dore\u0219te s\u0103 confere mai mult\u0103 complexitate vinului spumant, prelunge\u0219te durata contactului vinului cu drojdia sedimentat\u0103.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><em>Am men\u021binut Cuv\u00e9e des Fleurs pe drojdia sedimentat\u0103 timp de cel pu\u021bin 90 de zile. Astfel, vinul cap\u0103t\u0103 o textur\u0103 mai catifelat\u0103, note de brio\u0219\u0103, crem\u0103 \u0219i migdale, precum \u0219i un perlaj mai fin \u0219i mai persistent. Am ales aceast\u0103 abordare inten\u021bionat, pentru a conferi vinurilor un caracter nobil \u0219i o structur\u0103 armonioas\u0103\u201d, explic\u0103 Maria Bebea.<\/em><\/p>\n<\/blockquote>\n\n\n\n<p>Interesant este de ce unul e <em>brut natur<\/em> \u0219i cel\u0103lalt <em>demisec<\/em>? Potrivit vinificatoarei, cele dou\u0103 niveluri de dulcea\u021b\u0103 ale vinurilor au fost alese pentru a eviden\u021bia perspective diferite asupra spumantelor. Stilul <em>demisec<\/em> este mai bl\u00e2nd \u0219i mai accesibil, cu un lichior de dozaj care accentueaz\u0103 aromele \u0219i confer\u0103 rotunjime gustului. \u00cen schimb, <em>brut natur<\/em>, f\u0103r\u0103 adaos de zah\u0103r, scoate \u00een eviden\u021b\u0103 puritatea soiului \u0219i a terroir-ului \u2013 un stil mai sec, structurat, pentru cei care prefer\u0103 spumantele austere.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Ce este \u00een pahar?<\/strong><\/h5>\n\n\n\n<p>De obicei degust spumantele din dou\u0103 tipuri de pahare \u2013 <em>flute-ul <\/em>clasic \u0219i un pahar universal de vin. Folosesc primul pahar, deoarece este forma tradi\u021bional\u0103 de servire a vinurilor <em>cu bule magice \u00een pahar de tip flute<\/em>, iar pe al doilea \u2013 un pahar cu deschidere mai larg\u0103 \u2013 pentru a evalua complexitatea \u0219i intensitatea buchetului aromatic.<\/p>\n\n\n\n<p>\u00cen cazul soiurilor aromatice, <em>flute<\/em>-ul este suficient. <em>Cuv\u00e9e des Fleurs<\/em> nu face excep\u021bie \u2013 servit astfel, vinul confer\u0103 o not\u0103 festiv\u0103, iar jocul perlajului e o pl\u0103cere vizual\u0103.<\/p>\n\n\n\n<p>\u00cencep cu <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-purple-color\">Cuv\u00e9e des Fleurs brut natur<\/mark><\/strong>. Culoare e pai deschis. La turnare, formeaz\u0103 o p\u0103l\u0103rie bogat\u0103 de spum\u0103. Bulele mai mari se transform\u0103 repede \u00een unele mai fine, iar efervescen\u021ba se men\u021bine.<\/p>\n\n\n\n<p>La prima impresie olfactiv\u0103 domin\u0103 florile. Aroma dezv\u0103luie flori de salc\u00e2m, iasomie, trandafir \u2013 urmate de nuan\u021be fructate, duchesse, s\u00e2mbure de cais\u0103, brio\u0219\u0103 \u0219i, discret, apare o arom\u0103 u\u0219or ascuns\u0103 a coajei de p\u00e2ine de secar\u0103 pr\u0103jit\u0103. Dar iat\u0103 c\u0103 busuiocul nu l-am depistat, probabil din cauza notei florale intense.<\/p>\n\n\n\n<p>Viorica e cunoscut\u0103 pentru profilul s\u0103u aromatic intens, pe c\u00e2nd Riton este mai discret. \u00cen cupaj, Riton u\u0219or tempereaz\u0103 exuberan\u021ba \u201epartenerei\u201d, aduc\u00e2nd echilibru. Ambele soiuri au o aciditate bun\u0103 (Riton provine, de exemplu, din Riesling de Rhin), calitate esen\u021bial\u0103 pentru spumante.<\/p>\n\n\n\n<p>Gustul acestui vin merit\u0103 o aten\u021bie aparte: textur\u0103 cremoas\u0103, dar cu prospe\u021bime bine p\u0103strat\u0103. Sunt prezente note de citrice, cais\u0103, par\u0103 \u201eDuchesse\u201d, nuc\u0103, flori \u0219i coaj\u0103 de secar\u0103. De\u0219i con\u021binutul de zah\u0103r rezidual dup\u0103 fermenta\u021bia secundar\u0103 este de doar 2,3 g\/l, vinul las\u0103 o impresie u\u0219or dulce \u2013 probabil datorit\u0103 altor compu\u0219i ob\u021binu\u021bi \u00een timpul fermenta\u021biei &#8211; de exemplu, glicerolului.<\/p>\n\n\n\n<p>Postgustul \u00eenc\u00e2nt\u0103 prin persisten\u021b\u0103 \u0219i complexitate. Se remarc\u0103 numeroase nuan\u021be gustative- duchesse, citrice, nuc\u0103. Iar aromele continu\u0103 \u0219i aici \u2013 coaj\u0103 de p\u00e2ine de secar\u0103 \u0219i note florale.<\/p>\n\n\n\n<p>De obicei, cea mai mare parte a calit\u0103\u021bilor vinurilor spumante ob\u021binute prin metoda Charmat se reg\u0103se\u0219te \u00een arom\u0103. \u00cens\u0103, \u00een cazul Cuv\u00e9e des Fleurs, \u00een opinia mea, bog\u0103\u021bia este \u00eemp\u0103r\u021bit\u0103 aproape egal \u00eentre nas \u0219i gust.<\/p>\n\n\n\n<p><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-purple-color\">Cuv\u00e9e des Fleurs demisec<\/mark> <\/strong>p\u0103streaz\u0103 acela\u0219i profil aromatic \u2013 fiind acela\u0219i vin, dar cu adaos de lichior de dozaj pentru un nivel de zah\u0103r de 41 g\/l. Diferen\u021ba apare doar la nivel gustativ, deoarece este, fire\u0219te, mai dulce. \u0218i perlajul este diferit: jocul bulelor este pu\u021bin mai domol, deoarece densitatea unui vin mai dulce este mai mare.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>Cu ce se potrive\u0219te?<\/strong><\/h5>\n\n\n\n<p>Datorit\u0103 aromelor intense \u0219i gustului expresiv, Cuv\u00e9e des Fleurs se armonizeaz\u0103 bine cu buc\u0103t\u0103ria asiatic\u0103, caracterizat\u0103 prin condimente picante.
