Deschiderea oficial\u0103 a avut loc de Ziua Na\u021bional\u0103 a Vinului \u00een octombrie 2020.<\/em><\/h4>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"770\" height=\"544\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/8557-1L.jpg\" alt=\"8557-1L\" class=\"wp-image-16116\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/8557-1L.jpg 770w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/8557-1L-300x212.jpg 300w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/8557-1L-768x543.jpg 768w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/8557-1L-585x413.jpg 585w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Ideea de a crea propria vin\u0103rie a ap\u0103rut \u00een timp ce studiam \u00een Germania, unde am cunoscut \u00eendeaproape, prin prisma \u00eentreprinderilor mici, cultura vi\u021bei de vie \u0219i a vinifica\u021biei germane,\u201d afirm\u0103 oenologul. \u201eLucr\u00e2nd \u00een astfel de vin\u0103rii, s-a n\u0103scut ideea \u0219i visul de a crea ceva similar. \u00cen 2009 am hot\u0103r\u00e2t s\u0103 \u00eenfiin\u021bez o podgorie. Tot \u00een acel an am achizi\u021bionat vechiul conac boieresc, care dup\u0103 cel de-al doilea r\u0103zboi mondial a fost na\u021bionalizat \u0219i folosit de stat \u00een diverse scopuri. \u00cen perioada sovietic\u0103, aici a fost amplasat\u0103 C\u00e2rmuirea sovhozului, mai t\u00e2rziu gr\u0103dini\u021ba de copii pe care am frecventat-o \u0219i eu \u00een copil\u0103rie. P\u00e2n\u0103 la privatizare, cl\u0103direa a fost, pentru o perioad\u0103, abandonat\u0103, iar dup\u0103 un timp, par\u021bial ruinat\u0103, dar totu\u0219i am fost fidel ideilor mele de a deschide aici o mic\u0103 vin\u0103rie \u0219i o pensiune turistic\u0103.\u201d<\/strong><\/p><\/blockquote>\n\n\n\n<p>Locul pentru plantarea vi\u021bei de vie a fost ales \u00eentr-o microzon\u0103 unic\u0103, cu condi\u021bii ideale, care are forma unui amfiteatru cu pant\u0103 estic\u0103 cu \u00eenclina\u021bie de 6 &#8211; 15 grade. Solurile sunt foarte\u00a0 s\u0103race, av\u00e2nd \u00een compozi\u021bie doar 1-2,5% de humus \u0219i un pH de 6,5-6,7%, ceea ce confer\u0103 vinului o bun\u0103 aciditate, \u0219i \u00eel \u00eembog\u0103\u021be\u0219te cu minerale. Pe acest areal se \u00eent\u00e2lnesc cinci tipuri de soluri, de la argil\u0103 p\u00e2n\u0103 la nisip, ce confer\u0103 strugurilor numeroase gusturi \u0219i ne permit s\u0103 ob\u021binem diverse stiluri de vin. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"770\" height=\"517\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/vinogradnik-Arkadiya.jpg\" alt=\"vinogradnik-Arkadiya\" class=\"wp-image-16122\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/vinogradnik-Arkadiya.jpg 770w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/vinogradnik-Arkadiya-300x201.jpg 300w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/vinogradnik-Arkadiya-768x516.jpg 768w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/vinogradnik-Arkadiya-585x393.jpg 585w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure>\n\n\n\n<p>Suma temperaturilor active pe panta sudic\u0103 a parcelei este aceea\u0219i ca \u0219i \u00een partea de sud a Moldovei, iar pe panta nordic\u0103 cu 15% mai joas\u0103, condi\u021biile fiind ideale at\u00e2t pentru vinurile ro\u0219ii, c\u00e2t \u0219i pentru vinurile albe. Podgoria este amplasat\u0103 la \u00een\u0103l\u021bimea de 270-350 m fa\u021b\u0103 de nivelul m\u0103rii, altitudinea reprezent\u00e2nd cel mai \u00eenalt punct al viilor din Moldova. La fiecare 100 de metri de la nivelul m\u0103rii, vara temperatura este mai r\u0103coroas\u0103 cu 0,6 grade, iar iarna tot cu at\u00e2t mai cald\u0103, ceea ce este favorabil pentru vi\u021b\u0103 de vie. Este foarte important faptul c\u0103 aici nu sunt \u00eenghe\u021buri extreme care s\u0103 afecteze butucii, astfel vi\u021ba de vie se simte foarte confortabil pe acest terroir. Pe pant\u0103 (s\u0103tenii o numesc Dealul Pietr\u0103riei) putem observa multe pietre, care ziua acumuleaz\u0103 c\u0103ldur\u0103 \u0219i noaptea o eman\u0103, de asemenea, au o contribu\u021bie pozitiv\u0103 la af\u00e2narea solului \u0219i p\u0103strarea umidit\u0103\u021bii \u00een el pe timp de var\u0103. Un rol important \u00eel are \u0219i amplasarea podgoriei la \u00een\u0103l\u021bime. \u00cen afar\u0103 de aceasta, maestuo\u0219ii codri \u00eencep chiar \u00een vecin\u0103tatea podgoriei noastre, care, de asemenea, au un impact pozitiv asupra microclimei locale.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>\u00cen fiecare an am plantat c\u00e2te un hectar de vi\u021b\u0103 de vie, iar anul acesta am plantat 4,5 hectare. Suprafa\u021ba total\u0103 a suprafe\u021bei plantate constituie 15 hectare. Soiurile albe ocup\u0103 panta de nord a amfiteatrului, ele fiind deschise spre v\u00e2nt, iar cele ro\u0219ii panta de sud. \u00cen total, \u00een acest areal sunt cultivate 12 soiuri de struguri: Feteasca Regal\u0103,\u00a0 Sauvignon Blanc, Chardonnay, Pinot Noir, Feteasca Neagr\u0103, Rara Neagr\u0103, Saperavi, Feteasca Alb\u0103, Riesling, iar \u00een acest an au mai fost plantate soiurile Rka\u021biteli, Cabernet Franc \u0219i Viorica. Posibil c\u0103 aceasta-i mult pentru o mic\u0103 vin\u0103rie, \u00eens\u0103 pentru turism este perfect. Pentru noi este curios cum se comporta diverse soiuri pe terroir-ul nostru\u201d, explic\u0103 Arcadie.<\/strong><\/p><\/blockquote>\n\n\n\n<p>Ne-a uimit cultivarea soiurilor sudice (Saperavi), plantate pe panta sudic\u0103 a parcelei. Interlocutorul, auzind \u00eendoielile mele, z\u00e2mbe\u0219te, numind acest fenomen un\u00a0 stereotip. \u0218i vinul s\u0103u, Saperavi, a demonstrat scepticismul vinificatorului \u00een aceast\u0103\u00a0 privin\u021b\u0103, deoarece Arcadie, \u00een gospod\u0103rie, se ocup\u0103 de managementul culturilor. <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Eu am studiat meseria de vinificator \u00een Germania, unde clima e la limit\u0103 pentru cultivarea vi\u021bei de vie,\u201d a continuat d\u00e2nsul. \u201eOdat\u0103 cu \u00eenc\u0103lzirea global\u0103, s-au \u00eembun\u0103t\u0103\u021bit condi\u021biile pentru cultivarea vi\u021bei de vie. Pe timpuri existau probleme. \u00cen a\u0219a situa\u021bie, omul caut\u0103 diferite metode pentru a influen\u021ba pozitiv dezvoltarea butucilor. \u00cen Moldova, noi vorbim despre un an bun sau r\u0103u, f\u0103r\u0103 a c\u0103uta mijloacele de substituire a condi\u021biilor climaterice. Ceea ce am \u00eenv\u0103\u021bat acolo implimentez \u0219i aici, la ceea ce d\u0103 Dumnezeu, aducem \u0219i noi contribu\u021bia noastr\u0103. Saperavi, situat pe panta sudic\u0103, are o coacere minunat\u0103. De la \u00eenflorire p\u00e2n\u0103 la recoltare, sunt necesare aproximativ 90-110 zile. Gra\u021bie m\u0103surilor pe care le-am implementat pe sector, putem prelungi recoltarea chiar peste 125 de zile, perioada mai \u00eendelungat\u0103 de coacere oferind vinului mai mult caracter. Cu toate c\u0103 ne afl\u0103m la grani\u021ba de nord a viticulturii, \u00een vinul Saperavi, alcoolul atinge 14,5-15%, deci cu coacerea nu sunt probleme.\u201d<\/strong><\/p><\/blockquote>\n\n\n\n<p>Buta\u0219ii sunt planta\u021bi destul de des, la \u00eenceput \u2013 3500 pe hectar, ast\u0103zi &#8211; 6250 de buta\u0219i. Toate r\u00e2ndurile merg de sus \u00een jos. La Crama Mirce\u0219ti nu se vorbe\u0219te despre roada la hectar, ci despre roada la butuc, cele albe &#8211; p\u00e2n\u0103 la 2-3 kg, iar cele ro\u0219ii &#8211; 1,5\u20132 kg, \u00een dependen\u021b\u0103 de soiul \u0219i tipul vinului.<\/p>\n\n\n\n<p>Lucr\u0103rile \u00een vie \u00eencep cu t\u0103iatul \u00een uscat, care st\u0103 la baza unei recolte durabile. \u00cen luna mai are loc r\u0103rirea l\u0103starilor verzi, care mai reduce din productivitatea butucului. Regulat se \u00eentreprind lucr\u0103rile de protec\u021bie \u00eempotriva maladiilor \u0219i d\u0103un\u0103torilor. \u00cen anul 2019 au avut loc 11 trat\u0103ri de protec\u021bie, dar de obicei au loc \u00eentre 7-8 trat\u0103ri. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"770\" height=\"814\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/Vinogradniki-Arkadiya2-2.jpg\" alt=\"Vinogradniki-Arkadiya2-2\" class=\"wp-image-16149\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/Vinogradniki-Arkadiya2-2.jpg 770w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/Vinogradniki-Arkadiya2-2-284x300.jpg 284w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/Vinogradniki-Arkadiya2-2-768x812.jpg 768w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2020\/11\/Vinogradniki-Arkadiya2-2-585x618.jpg 585w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Noi aspir\u0103m s\u0103 fim prieteno\u0219i cu natura, folosind c\u00e2t mai pu\u021bin\u0103 chimie, utiliz\u00e2nd \u00een procesul de protec\u021bie produse bio,<strong>\u201d<\/strong><\/strong> <strong>spune Arcadie Fo\u0219nea. <strong>\u201e<\/strong>Drept \u00eengr\u0103\u0219\u0103m\u00e2nt serve\u0219te compostul colectat de la st\u00e2na de oi, aproximativ 100 de tone pe an. Printre r\u00e2nduri am sem\u0103nat iarb\u0103, care se cose\u0219te de dou\u0103 ori pe an \u0219i serve\u0219te ca men\u021bin\u0103tor a umidit\u0103\u021bii, surs\u0103 de humus \u0219i asigur\u0103 un bun ecosistem \u00een podgorie. Suprafa\u021ba foliar\u0103 are o importan\u021b\u0103 foarte mare pentru dezvoltarea \u0219i coacerea strugurilor, de aceea este asigurat\u0103 o suprafa\u021b\u0103 rezonabil\u0103 pentru fiecare butuc. Fiecare opera\u021bie se \u00eendepline\u0219te calitativ. Angaja\u021bii sunt extrem de bine preg\u0103ti\u021bi. Scopul nostru este de a lucra calitativ \u0219i nu cantitativ. \u00cengrijirea vi\u021bei de vie este realizat\u0103 \u00een mediu de 4 sau 5 oameni, iar la recoltare particip\u0103 12-15\u00a0 muncitori. Compania e asigurat\u0103 cu tot necesarul pentru viticultur\u0103 \u0219i producere vin. Anul acesta am \u00eenceput recoltarea strugurilor pe 8 septembrie \u0219i am finalizat pe 14 octombrie. Crama Mirce\u0219ti particip\u0103 \u00een proiectul lot demonstrativ, ini\u021biat de ONVV, cu soiuri de Feteasca Neagr\u0103, care demonstreaz\u0103 rezultate excelente.<\/strong> <\/p><\/blockquote>\n\n\n\n<p>Construc\u021bia vin\u0103riei a \u00eenceput \u00een anul 2011, care continu\u0103 \u0219i ast\u0103zi. Piatra din care a fost cl\u0103dit beciul a fost scoas\u0103 din vechea cl\u0103dire, cur\u0103\u021bit\u0103 \u0219i refolosit\u0103, iar suprafa\u021ba beciului a fost m\u0103rit\u0103. Vinurile ro\u0219ii, sunt obligatoriu maturate \u00een butoaie de lemn. \u00cen prezent compania de\u021bine \u00a090 de butoaie, num\u0103rul c\u0103rora va cre\u0219te p\u00e2n\u0103 la 150. Butoaiele sunt din lemn de stejar francez \u0219i moldovenesc. De asemenea, exist\u0103 o zdrobitoare \u0219i un pres-teasc pneumatic.\u00a0 Strugurii se recolteaz\u0103 \u00een l\u0103zi a c\u00e2te 10 kg. Deviza noastr\u0103 este: 90% din calitatea vinului sunt strugurii \u0219i 10% a omului,\u201d  afirm\u0103 Arcadie Fo\u0219nea. \u201dNoi am \u00eenceput s\u0103 producem vin \u00een anul 2018. P\u00e2n\u0103 atunci, strugurii au fost v\u00e2ndu\u021bi colegilor. \u00cen anul 2020 am \u00eembuteliat 18 mii de sticle. La moment, producem 8 tipuri de vin. Cu timpul, planific\u0103m producerea anual\u0103 a 50 de mii de sticle de vin. Noi nu tindem spre vinuri foarte parfumate, dar punem accentul pe mineralitate \u0219i ne dorim cu timpul ca vinul s\u0103 devin\u0103 din ce \u00een ce mai bun. Toate vinurile ro\u0219ii sunt maturate \u00een butoi timp de 1-2 ani, iar din cele albe, doar un vin \u2013 Fum\u00e9 Blanc. Datorit\u0103 sortimentului divers de soiuri, producem at\u00e2t vinuri de soi, c\u00e2t \u0219i cupaje sub brandurile Crama Mirce\u0219ti \u0219i Bardul din Mirce\u0219ti. Vinurile ro\u0219ii Crama Mirce\u0219ti sunt maturate \u00een barrique-uri mai vechi pentru a p\u0103stra fructuozitatea \u0219i amprenta terroir-ului, iar cele ro\u0219ii din Bardul din Mirce\u0219ti, p\u0103str\u0103m \u00een barrique-ri noi p\u00e2n\u0103 la doi ani, astfel aceste vinuri devin mai complexe.\u00a0<\/strong><\/p><p><strong>Noi ne afl\u0103m la \u00eenceput de cale \u0219i p\u00e2n\u0103 c\u00e2nd nu cunoa\u0219tem suficient, \u00een ideal, cum trebuie s\u0103 fie vinurile noastre. Totu\u0219i suntem siguri, c\u0103 cu fiecare an, ele vor deveni tot mai bune. Noi apreciem poten\u021bialul soiurilor tradi\u021bionale, iar pentru\u00a0 \u00een\u021belegerea lor este nevoie de o perioad\u0103 mai \u00eendelungat\u0103.\u201d<\/strong><\/p><\/blockquote>\n\n\n\n<p>Paralel, cu producerea vinului, vin\u0103ria dezvolt\u0103 \u0219i latura turistic\u0103. Din p\u0103cate arhitectura conacului nu s-a pastrat \u00een perioada sovietic\u0103.
