P\u00e2n\u0103 \u00een acel moment, vin\u0103riile moldovene\u0219ti nu practicau o astfel de tehnic\u0103 pentru designul etichetelor. Iar calitatea vinurilor din start a fost impus\u0103 drept una \u00eenalt\u0103. Fiecare dintre aceste vinuri \u00ee\u0219i are propria istorie. <\/strong><\/em><\/h4>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Carpe\nDiem Femme Fatale, 2017<\/strong><\/h4>\n\n\n\n<p>Ideea de a cupaja vinurile\nFeteasca Alb\u0103 \u0219i Feteasca Regal\u0103 a ap\u0103rut pentru prima dat\u0103 \u00een urm\u0103 cu c\u00e2\u021biva\nani, \u00een timpul \u00eent\u00e2lnirii celebrului expert \u00een vinuri Robert Joseph cu\nvinificatorii moldoveni la vinoteca Carpe Diem, desigur, \u00een timpul unei\ndegusta\u021bii. Treptat,\napar notele de migdale, cais\u0103 pu\u021bin necoapt\u0103, nectarin\u0103 \u0219i o nuan\u021b\u0103 u\u0219oar\u0103 de\nfaguri. Paharul gol la fel miroase a faguri. Textura vinului este m\u0103t\u0103soas\u0103. \u00cen\ngust se simte o aciditate&nbsp; pl\u0103cut\u0103 cu\nnuan\u021b\u0103 de l\u0103m\u00e2ie, \u00een postgust &#8211; coaja de l\u0103m\u00e2ie. Dup\u0103 ceva timp, gustul se\nschimb\u0103, \u00een el apare dracila. Este un vin pl\u0103cut.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Premii<\/strong><\/h4>\n\n\n\n<p><strong>Medalii de aur<\/strong><\/p>\n\n\n\n<p><em><strong>Berliner Wein Trophy` 2018-summer tasting<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>AsiaWineTrophy` 2018<\/strong><\/em><\/p>\n\n\n\n<p>Pentru mine,\ndenumirea Femme Fatale se asociaz\u0103 cu acest c\u00e2ntec.<\/p>\n\n\n\n<figure class=\"wp-block-embed-youtube aligncenter wp-block-embed is-type-video is-provider-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"Scorpions - Woman (Official Music Video)\" width=\"1170\" height=\"658\" src=\"https:\/\/www.youtube.com\/embed\/fKqxB5w4ukg?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Carpe\nDiem Bad Boys, 2017<\/strong><\/h4>\n\n\n\n<p>Denumirea vinului\nBad Boys \u00eei implic\u0103 pe \u201eb\u0103ie\u021bii r\u0103i\u201d care au inventat acest cupaj. \u00cen el au\nintrat Feteasca Neagr\u0103 \u0219i Saperavi \u00een propor\u021bii egale.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>\u00cen acest vin, noi am combinat cel mai renumit soi de struguri ro\u0219ii moldovenesc \u0219i cel mai renumit soi ro\u0219u georgian, care simbolizeaz\u0103 dou\u0103 regiuni vinicole diferite \u0219i dou\u0103 culturi &#8211; lucru pe care nimeni nu l-a f\u0103cut \u00eenainte, de aceea spunem c\u0103 suntem \u201eb\u0103ie\u021bi r\u0103i\u201d. La primul nas se\nsimte aroma fructelor negre de p\u0103dure, printre care se eviden\u021biaz\u0103 cire\u0219ele\nnegre \u0219i piperul negru. De obicei, \u00een aromele primare (c\u00e2nd vinul abia a fost\nturnat \u00een pahar \u0219i nu a fost rotit pentru aerare) nu se disting arome detaliate,\nacest vin, \u00eens\u0103, prezint\u0103 o excep\u021bie.<\/p>\n\n\n\n<p>\u00cen buchetul s\u0103u\n(vinul fiind maturat timp de 12 luni \u00een barricuri franceze) se simte aroma pur\u0103\na pomu\u0219oarelor negre r\u0103scoapte \u2013 vi\u0219ine, cire\u0219e, mure, precum \u0219i de piper\nnegru, prune uscate, rodie spart\u0103 \u0219i pu\u021bin gem de coac\u0103z\u0103 neagr\u0103. Echilibrul dintre\nalcool, taninuri \u0219i aciditate este foarte reu\u0219it. Gustul pur, la prima\n\u00eenghi\u021bitur\u0103 \u2013 sec, se simte o aciditate vie \u0219i taninurile mature. \u00cen gust \u2013\nam\u0103r\u0103ciunea u\u0219oar\u0103 a cire\u0219elor negre s\u0103lbatice r\u0103scoapte, care trece u\u0219or \u00een\ndulcea\u021b\u0103, u\u0219or pip\u0103rat\u0103. \u00cen postgust se simte o nuan\u021b\u0103 de cacao. Paharul gol\nemite arome de pomu\u0219oare negre, piele nobil\u0103 \u0219i o nuan\u021b\u0103 de frunze de dafin.<\/p>\n\n\n\n<p>Peste pu\u021bin timp,\nam turnat din nou vin \u00eentr-un pahar. Pe l\u00e2ng\u0103 aromele enumerate mai sus, au\nap\u0103rut nuan\u021be de vanilie, mai \u00eent\u00e2i \u00een gust. Mai t\u00e2rziu, \u00een buchet, a ap\u0103rut\nmirosul de nuc\u0219oar\u0103 \u0219i un fler u\u0219or de scor\u021bi\u0219oar\u0103.<\/p>\n\n\n\n<p>Carpe Diem Bad\nBoys, 2017 este un vin foarte impresionant, foarte interesant, t\u00e2n\u0103r \u0219i plin de\nvia\u021b\u0103. Acesta este unul dintre cele mai bune asamblaje moldovene\u0219ti. S-ar p\u0103rea\nc\u0103 totul este at\u00e2t de simplu &#8211; dou\u0103 soiuri de struguri \u0219i un butoi bun. \u00cens\u0103\nc\u00e2t de minunat s-a primit! Este interesant, c\u0103 aroma puternic\u0103 a pomu\u0219oarelor\ndin buchet nu a fost atenuat\u0103 de maturizarea \u00een butoi, efectul acestuia abia se\nobserv\u0103. Con\u021binutul de alcool &#8211; 14,5%.\nBreaking Red 2017, este de o culoare rubinie intens\u0103, iar pe marginea paharului\n&#8211; rubinie. Aromele primare sunt de pomu\u0219oare negre r\u0103scoapte. Buchetul\ndezv\u0103luie arome de prune uscate, coac\u0103z\u0103 neagr\u0103, vi\u0219ine negre uscate, mure,\npiper negru, o nuan\u021b\u0103 u\u0219oar\u0103 de frunze de tutun uscate. Apoi &#8211; nuc\u0219oar\u0103,\nscor\u021bi\u0219oar\u0103, compot de fructe uscate, pu\u021bin\u0103 ciocolat\u0103 \u0219i o nuan\u021b\u0103 p\u0103m\u00e2ntoas\u0103.<\/p>\n\n\n\n<p>Vinul are o textur\u0103 m\u0103t\u0103soas\u0103, taninuri mature moi \u0219i o aciditate destul de\nridicat\u0103. Alcoolul este foarte bine integrat \u00een corpul vinului \u0219i nu se simte nici\n\u00een arom\u0103, nici \u00een gust. Gustul de pomu\u0219oare \u00eenv\u0103luie cavitatea bucal\u0103. Este\nvoluminos, ca 3D. \u00cen gust se deslu\u0219esc vi\u0219inele \u0219i prunele, iar \u00een postgust &#8211;\nun gust u\u0219or de ciocolat\u0103. Paharul gol eman\u0103 arome de pomu\u0219oare proaspete. Dup\u0103\nce vinul s-a saturat mai mult cu oxigen (sticla era deschis\u0103 timp de trei ore\ndeja), l-am turnat din nou \u00een pahar. Breaking Red &nbsp;&nbsp;s-a schimbat pu\u021bin \u00een post gust: a devenit de\nvi\u0219ine. At\u00e2ta pl\u0103cere! Acest vin pare a fi perfect.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Premii<\/strong><\/h4>\n\n\n\n<p><strong>Medalii de aur<\/strong><\/p>\n\n\n\n<p><em><strong>BerlinerWeinTrophy` 2019-summer tasting<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>Asia Wine Trophy` 2019<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>Mundus Vini Summer Tasting` 2019<\/strong><\/em><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Secretele vinificatorului<\/strong><\/h4>\n\n\n\n<p>Ion a subliniat c\u0103 toate recoltele de struguri au\nfost colectate \u00een l\u0103zi mici, concepute pentru 5-6 kg, ceea ce a permis livrarea\nstrugurilor la vin\u0103rie \u00eentregi, nedeteriora\u021bi. Acest lucru este deosebit de\nimportant \u00een cazul soiurilor albe. De pe c\u00e2mp strugurii se pun \u00een frigidere, \u0219i\nsunt r\u0103ci\u021bi la temperatura de 15-16 \u00b0 C. Apoi se aplic\u0103 tehnicile clasice de\nvinifica\u021bie.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Toate soiurile de struguri sunt procesate separat, cu folosirea drojdiilor selec\u021bionate de Institutul de Enologie din Champagne, ca \u0219i toate celelalte materiale pentru vinifica\u021bie\u201d, spune Ion Luca. &#8211; Toate vinurile ro\u0219ii trec prin fermenta\u021bie malolactic\u0103 cu ad\u0103ugare de bacterii. Aici nu experimentez mult, dar \u00eencerc s\u0103 procedez c\u00e2t mai mult \u00een conformitate cu regulile de vinifica\u021bie, f\u0103r\u0103 utilizarea drojdiei \u0219i bacteriilor s\u0103lbatice.<\/strong><\/p><p><strong>Fiecare soi ro\u0219u este maturat \u00een butoaie separat. Pentru vinurile care intr\u0103 \u00een Bad Boys \u0219i Breaking Red, am folosit 70% din barricuri \u00a0noi \u0219i 30% din barricuri de a doua sau a treia umplere. Pentru Bad Boys &#8211; cu o \u201epr\u0103jire\u201d mai puternic\u0103, iar pentru Breaking Red &#8211; cu una mai u\u0219oar\u0103. Dup\u0103 aceasta, vine momentul cupaj\u0103rii. Raportul soiurilor nu se repet\u0103 de la an la an. Sarcina mea este s\u0103 aduc vinul c\u00e2t mai aproape de recolta anului precedent, astfel \u00eenc\u00e2t consumatorul s\u0103 primeasc\u0103 ceea ce \u0219tie \u0219i ce deja i-a pl\u0103cut. \u201d<\/strong><\/p><\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Noroc\nde sus\u021binere <\/strong><\/h4>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Eu sunt unul dintre noroco\u0219ii care beneficiaz\u0103 de sprijinul Proiectului de competitivitate din Moldova, finan\u021bat de c\u0103tre USAID \u0219i Guvernul Suediei, \u00een cadrul asisten\u021bei tehnice acordate Asocia\u021biei Micilor Produc\u0103tori de Vin\u201d, spune Ion Luca. \u2013 \u00cen special, compania mea a primit utilaj pentru producerea vinului &#8211; trei rezervoare din o\u021bel inoxidabil de diferite volume, o pomp\u0103 \u0219i echipamente de refrigerare. La fel, folosim un aparat de etichetare a sticlelor, care a fost achizi\u021bionat pentru uz comun de c\u0103tre membrii Asocia\u021biei. \u00cen aceste scopuri, donatorii au achizi\u021bionat destul de mult utilaj. \u00cen cur\u00e2nd, va fi livrat \u0219i utilajul de prelucrare cu abur a butoaielor. Acest utilaj este foarte scump, de aceea nu orice produc\u0103tor mic \u0219i-l poate permite. \u00cen plus, el este foarte rar folosit. \u0218i noi inten\u021bion\u0103m s\u0103-l \u00eenchiriem la un pre\u021b rezonabil. \u00cen general, conceptul de partajare a utilajului este foarte bun. Cu banii c\u00e2\u0219tiga\u021bi din contractul de \u00eenchiriere se poate procura ceva nou.<\/strong><\/p><p><strong>Pentru dezvoltarea componentei \u00a0turistice, ni s-a achitat aproape jum\u0103tate din contractul de vitrajare a vin\u0103riei, deoarece avem mult\u0103 sticl\u0103. Vin\u0103ria o construim de la zero astfel ca s\u0103 putem primi \u0219i oaspe\u021bi Pe l\u00e2ng\u0103 producere, dorim s\u0103 dezvolt\u0103m \u0219i o destina\u021bie turistic\u0103. Am construit cl\u0103direa vin\u0103riei \u0219i un beci, ceea ce a fost dificil \u0219i scump. \u00cen prezent, se duc lucr\u0103rile de interior.
