La \u00eenceput, a ap\u0103rut vinul &#8222;<\/strong><\/em><a href=\"https:\/\/wine-and-spirits.md\/rosu-imparat-vino-iz-skazki\/\"><em><strong>Ro\u0219u \u00cemp\u0103rat&#8221;, 2015<\/strong><\/em><\/a><em><strong>, numit dup\u0103 personajul din \u201ePovestea lui Harap Alb\u201d de Ion Creang\u0103. \u00cen 2016 a fost creat vinul &#8222;Negru \u00cemp\u0103rat&#8221;: dac\u0103 exist\u0103 Ro\u0219u, s\u0103 fie \u0219i Negru. \u00cen 2018, s-a n\u0103scut \u0219i &#8222;Harap Alb&#8221;, personaj din aceea\u0219i poveste. Vinificatorul s-a str\u0103duit s\u0103 creeze caracterul acestor vinuri astfel, \u00eenc\u00e2t s\u0103 se potriveasc\u0103 cu denumirea lor. <\/strong><\/em>\u00a0<\/h4>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Ro\u0219u\n\u00cemp\u0103rat, 2017<\/strong><\/h4>\n\n\n\n<p>Primul vin &#8211; &#8222;Ro\u0219u \u00cemp\u0103rat&#8221;, 2015 (Feteasca Neagr\u0103, Rara Neagr\u0103, Cabernet Sauvignon), a avut un mare succes \u0219i s-a epuizat foarte repede. Dar, de\u0219i v\u00e2nz\u0103rile din roada urm\u0103toare \u2013 2016 p\u0103reau aparent garantate, Dan Prisacaru nu a produs un astfel de vin \u00een acel an, deoarece nu a avut struguri Feteasca Neagr\u0103 (vinificatorul cump\u0103r\u0103 primele dou\u0103 soiuri din acest cupaj).\u00a0 <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>\u00cen 2017, am f\u0103cut rost de Feteasca Neagr\u0103, dar am decis s\u0103 renun\u021b la utilizarea strugurilor Rara-Neagr\u0103, deoarece acest soi este foarte capricios \u0219i l-am \u00eenlocuit cu Merlot, &#8211; spune autorul vinului. &#8211; Propor\u021biile au r\u0103mas aproape acelea\u0219i, ca \u0219i prima dat\u0103: Feteasca Neagr\u0103 &#8211; 56%, Merlot &#8211; 32%, Cabernet Sauvignon &#8211; 12%. Vinul materie prim\u0103 din Feteasca Neagr\u0103 \u0219i cel din Cabernet Sauvignon au fost amestecate \u00eempreun\u0103 \u00een butoaie pentru 12 luni, iar cel din Merlot \u2013 pentru 14 luni. 35% din butoaie erau noi, restul &#8211; la a doua sau a treia umplere. Eu folosesc doar stejar francez &#8211; foarte scump, dar bun. \u00cen 2015, am experimentat cu un butoi din stejar de Krasnodar, \u00eens\u0103, dup\u0103 maturare, taninurile din vin erau prea agresive, de\u0219i volumul butoiului era de 400 litri, nu de 225. Iat\u0103 de ce, am optat pentru stejarul francez. Vinurile materie prim\u0103 ale asamblajului au fost supuse fermenta\u021biei malolactice. \u00cen total, am ob\u021binut 2800 sticle. &#8222;Ro\u0219u \u00cemp\u0103rat&#8221;, 2017 a fost exportat \u00een Japonia, Danemarca, Lituania, Germania \u0219i China\u00bb. \u00a0<\/strong><\/p><\/blockquote>\n\n\n\n<p>Av\u00e2nd\n\u00een vedere c\u0103 vinul a fost \u00eembuteliat \u00een aprilie 2019, acesta s-a epuizat destul\nde repede. Recomand decantarea. Dup\u0103 30 de minute, turn\u0103m\ndin decantor. Picioru\u0219e dense curg pe pere\u021bii paharului. Buchetul vinului\ncon\u021bine arome de cire\u0219e negre s\u0103lbatice amare, prune uscate, piper negru, cire\u0219e\nuscate, coac\u0103z\u0103 neagr\u0103, gem. \u00cel mai las s\u0103 respire \u00een decantor: \u00een buchet apar\narome de violete, porumbe, nuan\u021be de eucalipt, pu\u021bin\u0103 scor\u021bi\u0219oar\u0103 \u0219i vanilie. Se\ndezv\u0103luie frumos. <\/p>\n\n\n\n<p>Vinul\nare o aciditate vie, corp mediu, taninuri mature. Dup\u0103 decantare, a devenit\nfoarte moale. \u00cen gust &#8211; vi\u0219ine, la final \u2013 s\u00e2mbure de vi\u0219ine. \u00cen post-gust &#8211;\nnuan\u021be de ciocolat\u0103. &nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">&#8222;<strong>Negru \u00cemp\u0103rat&#8221;, 2017 <\/strong><\/h4>\n\n\n\n<p>Un\ncupaj specific de Bordeaux, cu propor\u021bii de Merlot &#8211; 50% \u0219i Cabernet Sauvignon\n&#8211; 50%, la fel ca \u00een Negru \u00cemp\u0103rat, 2016. Strugurii au fost cultiva\u021bi \u00een propria\npodgorie &#8211; vi\u021ba-de-vie fiind plantat\u0103 \u00een 2007, a reu\u0219it s\u0103 se maturizeze.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Dou\u0103 soiuri de struguri au fost prelucrate separat \u0219i au fost supuse fermenta\u021biei malolactice, spune Dan Prisacaru. Diferen\u021ba fa\u021b\u0103 de recolta anterioar\u0103 const\u0103 \u00een faptul c\u0103 vinul a fost maturat \u00een butoaie de stejar o perioad\u0103 mai mare de timp, \u00eens\u0103 au fost mai pu\u021bine butoaie noi. Dac\u0103 \u00een 2016 butoaiele noi constituiau 75%, \u00een 2017 \u2013 doar 35%. Din acest motiv, maturarea primului vin a durat 12 luni, iar celui de-al doilea &#8211; 14 luni. De asemenea, vinurile difer\u0103 u\u0219or prin con\u021binutul de alcool &#8211; 14,8% \u0219i, respectiv, 14,3% (pe etichet\u0103 este scris 14%). &#8222;Negru \u00cemp\u0103rat&#8221;, 2016 a fost deja v\u00e2ndut, iar v\u00e2nzarea celui din 2017 abia a \u00eenceput (\u00eembutelierea a avut loc \u00een august 2019, fiind produse 5300 sticle) \u0219i au fost deja efectuate exporturi \u00een Danemarca \u0219i China\u00bb. <\/strong><\/p><\/blockquote>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" width=\"770\" height=\"499\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4152-1.jpg\" alt=\"\" class=\"wp-image-13537\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4152-1.jpg 770w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4152-1-300x194.jpg 300w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4152-1-768x498.jpg 768w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4152-1-585x379.jpg 585w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure><\/div>\n\n\n\n<p>Vinul\neste de culoare rubiniu-\u00eenchis\u0103, picioru\u0219e grele \u0219i dense curg foarte lent pe\npere\u021bii paharului. La primul nas se simte aroma pomu\u0219oarelor negre coapte. Dup\u0103\naceasta, eu am turnat vinul \u00een decantor. <\/p>\n\n\n\n<p>Dac\u0103\neste turnat \u00een pahar imediat dup\u0103 decantare, se simt arome de piele \u0219i nuan\u021be de\np\u0103m\u00e2nt. \u00centr-un pahar gol, se simt nuan\u021be animale, apoi apar cele de fructe de\np\u0103dure \u0219i \u00een final \u2013 de vanilie dulce. Am revenit la acest pahar dup\u0103 trei ore\ndin \u00eent\u00e2mplare (pentru a-l sp\u0103la) \u0219i am g\u0103sit \u00een el un miros pl\u0103cut de\nciocolat\u0103 topit\u0103. <\/p>\n\n\n\n<p>Am\nmai l\u0103sat vinul s\u0103 respire \u00een decantor. Dup\u0103 ce a stat o or\u0103 \u00een decantor, \u00een\nvin s-au deschis note de prune uscate, iar dou\u0103 ore mai t\u00e2rziu de vi\u0219ine\nuscate, peste trei ore au ap\u0103rut arome u\u0219oare de ment\u0103, de frunze uscate de\ntutun, apoi de piper negru. Peste patru ore \u2013 arome de ceai negru. Iat\u0103 a\u0219a o\nevolu\u021bie interesant\u0103. <\/p>\n\n\n\n<p>Vinul are o aciditate vie. Este \u00eenc\u0103 t\u00e2n\u0103r, cu taninuri energice \u0219i un corp mediu. \u00cen gust (dup\u0103 trei ore de decantare) \u2013 o u\u0219oar\u0103 astringen\u021b\u0103, nuan\u021be de vi\u0219in\u0103, care se transform\u0103 \u00een note de s\u00e2mbure de vi\u0219in. \u00cen post-gust &#8211; note de ciocolat\u0103 neagr\u0103. &#8222;Negru \u00cemp\u0103rat&#8221;, 2017 se potrive\u0219te bine cu un steak la gr\u0103tar.\u00a0 <\/p>\n\n\n\n<p>Acest\nvin ar putea fi l\u0103sat timp de c\u00e2\u021biva ani \u00eentr-o pivni\u021b\u0103 bun\u0103 \u0219i r\u0103coroas\u0103\npentru maturare, dac\u0103 reu\u0219i\u021bi s\u0103-l cump\u0103ra\u021bi, desigur. Dan ar fi putut s\u0103-l\nlase s\u0103 se matureze \u00een sticle \u0219i peste doi ani s\u0103-l v\u00e2nd\u0103 mai scump. \u00cens\u0103\npentru un produc\u0103tor mic este cam problematic s\u0103 \u00eenghe\u021be resurse pentru o\nperioad\u0103 \u00eendelungat\u0103, a\u0219a c\u0103 vinde totul din mers. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">&#8222;<strong>Harap Alb&#8221;, 2018<\/strong><\/h4>\n\n\n\n<p>Este prima experien\u021b\u0103 a lui Dan \u00een producerea Blanc de Noirs. Numele personajului de basm (Harap Alb) a sugerat ideea: alb din negru. Soiurile de struguri ro\u0219ii (cu boabe negre) Cabernet Sauvignon (85%) \u0219i Feteasca Neagr\u0103 (15%) au dat na\u0219tere vinului alb &#8222;Harap Alb&#8221;, 2018. <\/p>\n\n\n\n<p>Acest vin \u0219i-a f\u0103cut debutul la edi\u021bia de prim\u0103var\u0103 a \u201eVernisajului vinului 2019\u201d, chiar neav\u00e2nd \u00eenc\u0103 etichet\u0103. \u00cen august, a participat la concursul &#8222;Mundus Vini Summer Tasting` 2019&#8221; \u0219i a c\u00e2\u0219tigat o medalie de argint. La edi\u021bia de iarn\u0103 a \u201eVernisajului vinului 2019\u201d, \u00een paharele oaspe\u021bilor au fost turnate ultimele sticle. Deja nu mai este \u00een v\u00e2nzare. \u00cen total, au fost produse mai pu\u021bin de 3 mii de sticle. &#8222;Harap Alb&#8221;, 2018 a fost v\u00e2ndut \u00een Moldova \u0219i exportat \u00een Japonia \u0219i Danemarca. \u00a0<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>Strugurii Cabernet Sauvignon \u0219i Feteasca Neagr\u0103 au fost prelucra\u021bi separat. Timp de dou\u0103 luni, s-a f\u0103cut batonaj. \u00cen vinul gata, con\u021binutul de alcool era de 12,5%, iar aciditatea de 6,2 g \/ l. Cei c\u0103rora le-a pl\u0103cut acest vin vor trebui s\u0103 a\u0219tepte p\u00e2n\u0103 \u00een februarie, c\u00e2nd urmeaz\u0103 a fi \u00eembuteliat vinul din noua road\u0103. \u00cen 2019, am produs &#8222;Harap Alb&#8221; din acelea\u0219i soiuri \u0219i \u00een aceea\u0219i propor\u021bie\u201d, explic\u0103 vinificatorul.<\/strong><\/p><\/blockquote>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" width=\"770\" height=\"559\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4179-1.jpg\" alt=\"\" class=\"wp-image-13538\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4179-1.jpg 770w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4179-1-300x218.jpg 300w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4179-1-768x558.jpg 768w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/IMG_4179-1-585x425.jpg 585w\" sizes=\"(max-width: 770px) 100vw, 770px\" \/><\/figure><\/div>\n\n\n\n<p>Vinul\neste de culoare galben-deschis\u0103, cu o nuan\u021b\u0103 u\u0219oar\u0103 de piersic. Picioru\u0219ele dense\nde pe pere\u021bii paharului indic\u0103 un corp bun, care i-a fost conferit de soiurile\nde struguri ro\u0219ii.<\/p>\n\n\n\n<p>La\nprimul nas \u2013 arome de fructe albe. \u00cen buchet &#8211; caise, flori albe (liliac), agri\u0219e,\nceva citrice. <\/p>\n\n\n\n<p>&#8222;Harap Alb&#8221;, 2018 este dens, cu o aciditate pl\u0103cut\u0103 \u00een gust, \u00een care se deslu\u0219esc note de caise proaspete, dense, nu prea coapte \u0219i de m\u0103r de var\u0103. \u00cen post-gustul \u00eendelungat \u2013 miez de caise. Este un vin interesant, \u00een care soiurile ro\u0219ii procesate \u00een alb, ca de obicei, intrig\u0103. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Unde\npoate fi cump\u0103rat?<\/strong><\/h4>\n\n\n\n<p><em><strong>\u00cen vinotecile din Chi\u0219in\u0103u, magazinul-online &#8222;Vincuvin&#8221;, hipermarketul &#8222;Nr. 1&#8221;, supermarketurile &#8222;Fourchette&#8221; \u0219i \u00een re\u021beaua &#8222;Rogob&#8221;.\u00a0 <\/strong><\/em><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Familia\nmea<\/strong><\/h4>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft\"><img loading=\"lazy\" decoding=\"async\" width=\"180\" height=\"180\" src=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/MT.png\" alt=\"\" class=\"wp-image-13540\" srcset=\"https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/MT.png 180w, https:\/\/wine-and-spirits.md\/wp-content\/uploads\/2019\/12\/MT-150x150.png 150w\" sizes=\"(max-width: 180px) 100vw, 180px\" \/><\/figure><\/div>\n\n\n\n<p>Vinurile &#8222;Minis Terrios&#8221; au fost produse la o vin\u0103rie mic\u0103 din Chi\u0219in\u0103u, fondat\u0103 \u00een 2013 de Dan \u0219i Diana Prisacaru (la \u00eenceput, compania se numea SRL &#8222;Divib Media&#8221;, iar \u00een prezent \u2013 SRL &#8222;Familia mea&#8221;). Cu un an mai devreme, ei \u0219i-au finalizat studiile de masterat la Dijon (\u00een Fran\u021ba). La \u00eenceput, cump\u0103rau strugurii, apoi au cump\u0103rat 15 hectare de vie \u00een satul Harag\u00e2\u0219 din raionul Cantemir, inclusiv 5 hectare de soiuri tehnice. Cabernet Sauvignon \u0219i Merlot au fost plantate \u00een 2007, Sauvignon Blanc \u00een 2008. <\/p>\n\n\n\n<p>Deocamdat\u0103, aceast\u0103 \u00eentreprindere mica, ca \u0219i ceilal\u021bi membri ai Asocia\u021biei micilor produc\u0103tori de vin, nu dispune de suficiente resurse proprii, prin urmare se bucur\u0103 de suportul acordat acestor antreprenori de &#8222;Proiectul de competitivitate din Moldova&#8221; (finan\u021bat de USAID \u0219i Guvernul Suediei). SRL &#8222;Familia mea&#8221; a beneficiat de o pres\u0103 &#8222;Bucher Vaslin&#8221; \u00een calitate de grant. Dintre echipamentele mobile achizi\u021bionate de &#8222;Proiectul de competitivitate din Moldova&#8221; pentru utilizare \u00een comun de c\u0103tre vin\u0103riile mici care fac parte din Asocia\u021bie, \u00eentreprinderea are nevoie de un aparat de dopuire. <\/p>\n\n\n\n<p>Suportul const\u0103 \u0219i \u00een ac\u021biuni de marketing, care includ participarea colectiv\u0103 a micilor produc\u0103tori la diverse expozi\u021bii \u0219i concursuri. Expedierea mostrelor la concursurile interna\u021bionale este costisitoare, dar, datorit\u0103 sponsoriz\u0103rii din partea Oficiului na\u021bional al viei \u0219i vinului \u0219i &#8222;Proiectului de competitivitate din Moldova&#8221;, vinurile lui Dan Prisacaru particip\u0103, de asemenea, la concursuri \u0219i c\u00e2\u0219tig\u0103 medalii.
