The average vine age is 10\u202615 years.\u00a0 Biological methods are used for vine protection,complete exclusion of mineral fertilizers and herbicides.<\/p>\n<p><strong>\u00a0<\/strong><strong>Winemaking &amp; aging<\/strong><\/p>\n<p>Produced from grapes harvested at their complete technological maturity, the wine is processed with the complete elimination of grape bunches, based on short or medium maceration and fermentation of the skins, selection of must fractions, controlled alcoholic fermentation. The malo-lactic fermentation is essentially made. The wine is aged in butts (500\u20261000 l), made from local oak, for 8\u202612 months. The clarifying, stabilization (exclusively with eggs albumin) and bottling is made on the estate. The bottles are kept in the cellar for minimum 1 month before sales.<strong>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 <\/strong><\/p>\n<p><strong>Wine\u2019s personality\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/strong><\/p>\n<p>A dark colour, with black-ruby nuances. A strong and expressive bouquet suggests fine and discrete floral notes (poppy) in the nose, complemented by red fruit aromas (raspberries, cherries, wild strawberries).
